Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and slice the tomatoes and zucchini into 1/4-inch rounds.
  • Peel and thinly slice the Yukon Gold potatoes into 1/8-inch rounds.
  • Minced garlic can be prepared a few minutes in advance for the best flavor.
  • Spread half of the olive oil on the bottom of a baking dish.

Cooking and Assembly

  • Layer the sliced Yukon Gold potatoes evenly on the bottom of the baking dish.
  • Sprinkle with salt, pepper, and half of the Italian seasoning.
  • Add a layer of zucchini slices, followed by another layer of tomatoes.
  • Repeat the layers until you’ve used all the vegetables, finishing with a layer of tomatoes.
  • In a small bowl, mix the garlic, remaining olive oil, and Italian seasoning. Drizzle this mixture over the top layer.
  • Pour the tomato sauce over everything and sprinkle with parmesan cheese.
  • Cover the dish with foil and bake for 30 minutes.

Serving

  • Remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbly.
  • Check the doneness of the potatoes by inserting a fork; they should be tender.
  • Let the gratin cool for a few minutes before slicing.
  • Garnish with chopped parsley and serve warm.

Notes

For best results, use uniform slices for even cooking. Consider swapping zucchini for yellow squash or mixing cheeses for added flavor. This dish can be made ahead and stored for meal prep.
