Main Ingredients

  • 1 teaspoon Salt Enhances the flavor profile.
  • 1/2 cup All-Purpose Flour Binds the mixture for a crunchy outside.
  • 1/4 cup Grated Parmesan Cheese Infuses a rich, savory flavor.
  • 1 large Large Egg Provides structure and moisture.
  • 1 teaspoon Garlic Powder A hint of warmth and depth.
  • 1/2 teaspoon Black Pepper Adds a subtle kick.
  • 1/4 cup Chopped Green Onions Freshness and color.
  • Oil for frying Oil for Frying Creates that perfect crispy exterior.

Instructions

Preparation

  • Rinse the zucchinis thoroughly under cold water, then pat them dry with a clean towel.
  • Grate the zucchinis using a box grater or food processor, leaving the skin on for added nutrients.
  • Place the grated zucchini in a clean dish towel and squeeze out excess moisture; let it sit for about 10 minutes with salt to draw out more moisture.

Cooking

  • In a separate bowl, mix the flour, Parmesan cheese, egg, garlic powder, and black pepper until smooth. Add the squeezed zucchini and chopped green onions, stirring until combined.
  • Heat frying oil in a large skillet over medium heat.
  • Once the oil is shimmering, scoop about 2 tablespoons of mixture per fritter into the skillet, flattening slightly.
  • Fry for 3-4 minutes on each side until golden brown and cooked through.

Serving

  • Transfer the fritters to a paper towel-lined plate to drain excess oil.
  • Serve immediately while hot, or allow to cool slightly before storing for later.
  • Enjoy dipped in Greek yogurt or your favorite sauce for added flavor.

Notes

For optimal crispiness, ensure to squeeze out as much moisture from the zucchini as possible. Consider letting the mixture rest in the fridge for 30 minutes before cooking for an even crunch.
