Instructions
 

Preparation

  • Wash the zucchini thoroughly, cut off the ends, and grate it using a box grater or food processor.
  • Transfer the grated zucchini to a clean kitchen cloth or paper towel and squeeze out the excess moisture.
  • Finely chop the garlic cloves and place them in a mixing bowl alongside the squeezed zucchini.
  • Add the Panko bread crumbs, eggs, and both cheeses to the bowl. Season with salt and pepper, then mix well until combined.

Cooking

  • Heat a large skillet over medium heat and add 1 tablespoon of oil, coating the pan evenly.
  • Once hot, scoop about 1/4 cup of the zucchini mixture and flatten it into a patty shape with your hands. Place in the skillet.
  • Cook for about 3-4 minutes on each side or until golden brown. Adjust heat if necessary.
  • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serving

  • Arrange the zucchini fritters on a serving plate. Serve warm or at room temperature.
  • Consider topping with Greek yogurt or fresh herbs for added flavor.

Notes

For best results, use fresh zucchini and ensure to squeeze out excess moisture. Avoid overcrowding the skillet when frying.
