Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with unsalted butter.
  • Wash and slice the zucchini into thin rounds for even cooking.
  • In a mixing bowl, whisk together the sour cream, mayonnaise, garlic powder, onion powder, baking powder, and eggs until smooth.

Cooking

  • In a large mixing bowl, combine the sliced zucchini with the sour cream mixture, mixing well.
  • Stir in 1 cup of the sharp cheddar cheese and the Parmesan until fully incorporated.
  • Transfer the mixture into the greased baking dish.
  • Sprinkle the remaining cheddar cheese and crushed crackers evenly on top.
