Preparation

  • Gather all your ingredients and wash your fresh produce under cool running water.
  • Drain and rinse the black beans in a colander.
  • Slice the cherry tomatoes in half and dice the red onion into thin pieces.
  • Chop the bell pepper into small, bite-sized pieces.
  • Roughly chop the fresh cilantro.
  • Cut the avocado in half, remove the pit, and mash the flesh gently with a fork.

Assembly

  • In a large salad bowl, combine the mixed greens, black beans, corn, cherry tomatoes, red onion, bell pepper, and cilantro.
  • Add the mashed avocado to the salad mixture and stir carefully.
  • In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
  • Pour the dressing over the salad and toss gently until well coated.
  • Sprinkle tortilla strips and cheese on top.

Serving

  • Transfer the salad to serving bowls or plates.

Notes
