Ingredients
  

Vegetables

  • 1 large English cucumber Crisp freshness with hydrating properties
  • 1 medium Red onion Adds a sweet kick and vibrant color

Pickling Liquid

  • 1/2 cup Rice vinegar Provides the tangy base of the pickle
  • 1/2 cup Warm filtered water To dilute the vinegar
  • 2 tablespoons Maple syrup or raw honey Offers a touch of natural sweetness
  • 1 teaspoon Sea salt Enhances all flavors
  • 1/2 teaspoon Red pepper flakes For a little heat and spice

Instructions
 

Preparation

  • Wash the cucumber under cold water and pat it dry with a clean towel.
  • Slice the cucumber into thin rounds, about ΒΌ inch thick.
  • Peel and halve the red onion, then slice it thinly to achieve delicate rings.
  • Set both cucumber and onion aside in a large mixing bowl.

Cook/Assemble

  • In a small bowl, whisk together the rice vinegar, warm filtered water, maple syrup or raw honey, sea salt, and red pepper flakes until fully combined.
  • Pour the vinegar mixture over the cucumber and onion slices in the mixing bowl.
  • Toss everything gently to ensure all vegetables are coated with the pickling mixture.
  • Let the salad sit for at least 10 minutes to allow flavors to meld.

Serve

  • After letting it sit, gently toss the salad again.
  • Spoon the Zesty Pickled Salad into your favorite serving dish.
  • Enjoy immediately or refrigerate for an even tangier taste after a few hours!

Notes

For extra crunch, let the salad chill in the fridge for an hour before serving. Store in a glass jar for preservation. Adjust sweetness or salt as per taste.
