  • 1 tablespoon Cornstarch Prevents sticking, making the mochi easier to handle.

Instructions
 

Phase 1 – Prep

  • Wash and peel your peaches. Cut them in half, remove the pits, and slice them into quarters.
  • In a medium bowl, combine the sweet rice flour, sugar, and water. Stir until the mixture is smooth.
  • Cover the bowl with plastic wrap or a lid, leaving a small gap for steam to escape.
  • Let the mixture sit at room temperature for 10-15 minutes.

Phase 2 – Cook/Assemble

  • Prepare a steaming basket lined with parchment paper or a heat-safe plate. Lightly dust with cornstarch.
  • Transfer the mochi mixture into the steaming basket or plate.
  • Steam over simmering water for about 20-25 minutes, until the mochi turns translucent and firm. Test for doneness by checking the texture.
  • Carefully remove the mochi from the steaming basket and allow it to cool slightly.
  • Once cool enough to handle, dust your work surface with cornstarch.
  • Gently knead the mochi for a couple of minutes for better texture before cutting it into pieces.

Phase 3 – Serve

  • Take the individual pieces and wrap them around pieces of fresh peaches.
  • Roll them in cornstarch to save them from sticking to each other.
  • Serve immediately or store for later. Enjoy your chewy peach mochi!

Notes

For enhanced flavor, use ripe peaches; let them fully ripen for the best sweetness. Store leftovers in an airtight container for up to 3 days. Mochi can be frozen for up to 2 months.
