Fruits

  • 4 cups Watermelon, cubed Ensure ripe for optimal flavor.
  • 1 cup Strawberries, sliced Slice into rounds.
  • 1 cup Raspberries
  • 1 cup Cherries, pitted and halved Make them easier to eat.

Lime Mint Dressing

  • 1 tablespoon Lime juice Freshly squeezed for best flavor.
  • 1 teaspoon Lime zest Adds extra depth.
  • 1 tablespoon Agave syrup Adjust to taste.
  • 1/4 cup Fresh mint, chopped Infuses a fresh note.

Instructions
 

Preparation

  • Wash all the fruits under cold water.
  • Cube the watermelon into 1-inch pieces.
  • Slice the strawberries into rounds.
  • Pit and halve the cherries.
  • In a small bowl, combine lime juice, lime zest, and agave syrup, stir until blended.

Assembly

  • In a large bowl, combine watermelon, strawberries, raspberries, and cherries.
  • Pour dressing over fruit and gently toss.
  • Chop fresh mint and sprinkle over the salad.

Serving

  • Transfer salad to a serving bowl or individual cups.
  • Garnish with extra mint leaves, serve chilled or at room temperature.

Notes

Best when made fresh and can be prepped a day in advance. Store leftovers in an airtight container for 2-3 days.
