  • 1 cup red lentil hummus Creamy base that provides flavor and nutrition.

Sandwich Components

  • 2 slices bread of choice Brings the sandwich together.
  • 1 leaf green leaf lettuce Adds crispness and greenery.
  • 1 medium tomato Juicy slices enhance the freshness.
  • 0.5 medium cucumber Adds a refreshing crunch.
  • 2 oz goat cheese Tangy and creamy, complements other flavors.
  • 0.5 cup roasted red peppers Sweet and smoky elements for depth of flavor.
  • 0.25 cup alfalfa sprouts Light and fresh, adds wonderful texture.
  • 1 tbsp balsamic drizzle A sweet and tangy finish.

Preparation

  • Prepare the Hummus Spread by blending red lentils, roasted red peppers, tahini, olive oil, cumin, salt, and lemon juice in a food processor until smooth.
  • Toast both slices of bread lightly.
  • Spread an even layer of red lentil hummus on one slice of bread.
  • Top the hummus with lettuce, tomato slices, and cucumber slices.
  • On the second slice, gently spread a layer of goat cheese.
  • Add roasted red peppers and alfalfa sprouts, then drizzle with balsamic drizzle.
  • Close the sandwich, slice, and enjoy.

Notes

Can be served fresh with a side of crispy baked chips or a light salad. Great for meal prepping, and can be enjoyed cold or slightly warmed.
