For the jackfruit filling

  • 2 cups shredded jackfruit Use young jackfruit packed in brine
  • 1 tablespoon oil For sautéing
  • 1 medium yellow onion Diced

  • 2 tablespoons tomato paste For flavor enhancement
  • 1 teaspoon chili powder Adjust for spice level
  • 1 teaspoon smoked paprika For smokiness

  • 1/2 teaspoon salt To taste
  • 1/4 teaspoon black pepper For slight heat
  • 1/2 cup vegetable broth

For assembling tacos

  • 8 pieces corn or flour tortillas Warmed

Preparation

  • Drain and rinse the jackfruit in a mesh strainer, then transfer it to a bowl. Cut off the pointy tips of each piece if desired, and shred the jackfruit using clean hands or a fork.

Cooking

  • Heat oil in a frying pan over medium-low heat. Add diced onion and cook, stirring frequently, until fragrant, about 3-5 minutes.
  • Add minced garlic, tomato paste, chili powder, smoked paprika, cumin, salt, and black pepper to the pan. Stir constantly for 1 minute to meld the flavors.
  • Incorporate the shredded jackfruit into the seasoned vegetables, stirring for 2-3 minutes to combine.
  • Pour in vegetable broth, maple syrup, soy sauce, and lime juice. Stir well, reduce heat, and let the mixture simmer for about 5 minutes.

Assembling Tacos

  • In a separate frying pan, warm the tortillas by heating each side for 15-30 seconds. Alternatively, microwave the tortillas with a damp paper towel.
  • Top warm tortillas with the jackfruit mixture and your choice of toppings, like avocado, pico de gallo, lettuce, and sour cream.

Notes

For extra flavor, consider adding pickled onions or fresh cilantro as toppings. Store any excess filling in an airtight container for up to 4 days in the refrigerator, or freeze for up to three months.
