Preparation

  • In a large skillet over medium-high heat, warm the olive oil until shimmering.
  • Add the ground beef to the skillet, breaking it up as it cooks until browned.
  • Reduce heat to medium, then mix in the sliced onion, minced garlic, and seasonings. Cook for 2-3 minutes until the onion has softened.
  • Stir in the uncooked rice and sliced bell peppers, cooking for another 2-3 minutes until the peppers start to soften.
  • Pour in the beef broth, scraping up any browned bits from the pan. Stir in the tomato sauce and diced tomatoes; bring the mixture to a simmer over medium-high heat.
  • Lower the heat to medium-low, cover the skillet, and allow to cook until the rice is tender, about 20 minutes for parboiled rice.
  • Once the rice is done, remove the skillet from heat and stir well. Add the shredded cheese, cover again for 2 minutes to allow the cheese to melt, then serve immediately.

Notes

Feel free to customize the types of cheese or add extra vegetables like corn or zucchini for a nutritional boost. Let the dish sit for a few minutes after cooking for enhanced flavor.
