  • 4 large eggs Separating yolks and whites adds creaminess.
  • 1 tbsp cooking oil Needed for frying.
  • 1 tsp salt To taste, enhances overall flavor.

Vegetables

  • 1 cup frozen peas Offers sweet flavor and pop of color.
  • 1 cup chopped carrots Introduces crunch and sweetness.
  • 2 stalks green onion Adds freshness and aroma.

Seasoning

  • 2 tbsp coconut aminos A flavorful soy sauce substitute.
  • 1 tsp onion powder Enhances flavor depth.

Preparation

  • Chop the green onion and carrots, and set aside the frozen peas.
  • Gather your leftover rice or cook fresh rice and let it cool.
  • Crack the eggs and separate the yolk from the white, placing the yolk in a bowl with the rice.
  • Combine the egg yolk and rice until the rice is fully coated in a thin layer of yolk.

Cooking

  • In a hot frying pan, heat the cooking oil over medium-high heat until shimmering.
  • Add the egg white to the pan and cook until it is set, then remove from heat and set aside.
  • In the same pan, add the chopped green onion and cook until fragrant, about 1-2 minutes.
  • Incorporate the chopped carrots and frozen peas and cook until slightly tender, about 2-3 minutes.
  • Push the vegetables to the side of the pan and add the yolk-y rice to the open space.
  • Stir the rice and vegetables together until well mixed, then add coconut aminos and onion powder.

Serving

  • Return the cooked egg white to the pan, adding salt to taste and stir well.
  • Plate the fried rice and enjoy immediately while warm.

Notes

Utilize leftover rice for better texture. Customize with additional vegetables or proteins as desired. Optimize flavors by using sesame oil at the end for a nutty aroma.
