Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine ground beef, breadcrumbs, milk, and egg.
  • Add in chopped onion, minced garlic, salt, pepper, Worcestershire sauce, half of the ketchup, and mustard.
  • Mix everything well until just combined—don’t overmix!

Cooking

  • Use your hands to form small meatballs, about the size of a golf ball.
  • Make a slight indentation in each meatball and stuff in a cube of cheese.
  • Seal the meat around the cheese and repeat until all the mixture is used.
  • Place meatballs in a lined baking dish, leaving a little space between each one.
  • Top each meatloaf bite with the remaining ketchup.

Serving

  • Bake for about 20-25 minutes, or until cooked through and nicely browned.
  • Remove from the oven and let them cool for a few minutes.
  • Sprinkle with fresh parsley if desired and serve warm.

Notes

For extra flavor, sauté the onions and garlic before adding them to the mix. These meatloaf bites can be prepped ahead of time and stored uncooked in the fridge until you're ready to bake.
