Preparation

  • Grate the cucumber and place it in a colander over a bowl to catch excess liquid.
  • Squeeze the grated cucumber and put it in the fridge for at least 30 minutes to drain moisture.
  • In a bowl, mix together the Greek yogurt, lemon juice, dill, mint, olive oil, sea salt, and minced garlic.

Final Assembly

  • After draining, squeeze the cucumber again to remove more liquid and pat it dry with a paper towel.
  • Combine the grated cucumber with the yogurt mixture and stir well.
  • Chill the tzatziki for at least 30 minutes before serving.

Notes

Use fresh ingredients for the best flavor; let the tzatziki chill longer for deeper flavor development. Adjust garlic to taste.
