Preparation

  • Cut the chicken breasts into 1-inch pieces for even cooking.
  • Mince the garlic to release its flavor.
  • Drain the sun-dried tomatoes and chop them into smaller pieces.
  • Gather your seasonings and cheese so they’re ready to go.

Cooking

  • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the minced garlic and chicken pieces. Cook for about 5-7 minutes, until the chicken is golden brown.
  • Stir in the orzo, sun-dried tomatoes, and Italian seasoning. Cook for another 2-3 minutes to combine the flavors.
  • Pour in 3 cups of chicken broth and bring the mixture to a simmer. Cook for about 10 minutes, stirring occasionally, until orzo is tender.
  • Reduce heat and stir in the baby spinach, heavy cream, salt, black pepper, and mozzarella. Let everything meld together for about 5 minutes.

Baking and Serving

  • Preheat your oven to 350°F (175°C).
  • Sprinkle the grated parmesan cheese on top for a flavorful crust.
  • Bake in the oven for about 20 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes before serving.
