Preparation

  • Gather all your ingredients and have them ready.
  • Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
  • Chop the sun-dried tomatoes and mince the garlic.

Cooking

  • In a large skillet over medium heat, add olive oil.
  • Once hot, add the chicken breasts and cook for about 5-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  • Remove chicken and set aside. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in chopped sun-dried tomatoes, followed by heavy cream and Parmesan cheese. Mix until smooth and creamy.
  • Add the chicken back into the skillet, spoon the sauce over the top, and let simmer for 2-3 minutes.

Serving

  • Plate the Tuscan Chicken, drizzling additional sauce over the top.
  • Garnish with freshly chopped basil for a burst of freshness.

Notes

For the best results, marinate the chicken for an hour in olive oil, Italian seasoning, and garlic. Store leftovers in airtight containers for up to 3 days. Freezing is possible, but the cream may change texture upon thawing.
