Preparation

  • Preheat your oven to 325°F (163°C).
  • In a large bowl, combine graham cracker crumbs, melted butter, and brown sugar until well-mixed.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.
  • Set aside while you prepare the filling.

Cooking/Assembling

  • In a separate bowl, beat room temperature Challenge cream cheese until fluffy.
  • Add regular sugar, light brown sugar, and vanilla extract, mixing until incorporated.
  • Incorporate eggs one at a time, beating on low speed to prevent overmixing.
  • Stir in sour cream, heavy whipping cream, and sifted flour until smooth.
  • Pour the filling over the prepared crust, spreading it evenly.
  • Bake for 50-60 minutes or until the edges are set but the center is slightly jiggly.
  • Allow cooling on the counter for at least 30 minutes.

Serving

  • Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  • Before serving, drizzle with melted chocolate and caramel, and sprinkle pecans on top.
  • Slice with a warm knife for clean cuts and serve chilled.

Notes

For a smoother filling, make sure all your dairy ingredients are at room temperature. Store leftovers in an airtight container in the fridge to maintain freshness.
