Main Ingredients

  • 1 medium to large sweet potato (peeled and diced into cubes)
  • 1 lb ground turkey (450-500 grams, lean)
  • 1 clove grated garlic
  • 1 medium white onion (finely diced)
  • 1 teaspoon mixed dried herbs (e.g. Italian blend)
  • ⅔ teaspoon sea salt
  • ½ teaspoon white pepper (black is also fine, omit for AIP)
  • 1 teaspoon turmeric powder (optional) It's good for you!
  • a pinch nutmeg (optional)
  • 2 tablespoons tapioca flour or cassava flour Can add a little more, feel free to use regular or gluten-free flour here as well.

Instructions

Preparation

  • Start by boiling a kettle and pour boiling water into a pot. Add diced sweet potato cubes with ½ teaspoon of salt. Boil for about 10-12 minutes until tender, then strain and let cool.
  • Preheat your oven to 200°C (400°F).
  • Mash enough sweet potato to pack a good cup into a bowl. Mix in ground turkey, diced onion, garlic, herbs, salt, and spices. Combine until fully blended.
  • Add tapioca or cassava flour to the mixture and fold in gently.
  • Line a flat roasting tray with parchment paper, and drizzle with olive or coconut oil.
  • Wet your hands to prevent sticking, roll the mixture into approximately 12 small patties, and place them on the tray.
  • Bake in the preheated oven for 25-30 minutes, without needing to turn them.

Notes

These sausage patties can be stored in the fridge for up to four days, or frozen for up to three months. Serve them with sautéed greens, eggs, or in breakfast burritos. Customize with spices as desired.
