  • 2 large eggs Beaten before adding to the stir-fry.
  • 2 cups leftover turkey meat Shredded or chopped into bite-sized pieces.

Flavor Enhancers

  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 2 cups frozen mixed vegetables Thawed for easy cooking.
  • 3 tbsp soy sauce For umami flavor.
  • 1 tbsp sesame oil Adds nutty aroma and flavor.
  • 1/2 tsp white pepper For subtle heat.
  • 1/2 tsp garlic powder Enhances garlic flavor.
  • 2 tbsp green onions Sliced, for garnish.
  • 1 tbsp sesame seeds Used for garnish.

Instructions
 

Preparation

  • Ensure your rice is cooked, cooled, and refrigerated for at least four hours or overnight.
  • Dice the onion and mince the garlic, setting them aside.
  • Chop or shred the leftover turkey into bite-sized pieces.
  • Thaw the frozen mixed vegetables by running them under warm water.

Cooking

  • In a large skillet or wok, heat avocado oil over medium-high heat.
  • Add the diced onion and minced garlic, stirring for 2-3 minutes until softened.
  • Add beaten eggs and scramble for about 2 minutes, then mix with onions and garlic.
  • Stir in turkey meat and cooked rice, heating for 3-5 minutes.
  • Add thawed mixed vegetables, soy sauce, sesame oil, white pepper, and garlic powder, stirring for an additional 4-5 minutes.

Serving

  • Remove from heat, garnish with green onions and sesame seeds.
  • Serve immediately while hot.

Notes

Great for meal prep; can be stored in the fridge for up to 3 days or frozen for up to 3 months. Reheat in the oven or microwave.
