Main Ingredients

  • 28 oz canned diced tomatoes Adds juiciness and tang, choose seasoned or plain.
  • 15 oz tomato sauce For creaminess and body.
  • 15 oz black beans Nutty flavor and a nice texture; rinse to keep it light.
  • 15 oz kidney beans Adds heartiness.
  • 15 oz pinto beans or white beans Makes this even more filling.
  • 2 oz jar of diced jalapeños or mild green chilis Adjust to your heat preference.
  • 15 oz canned corn Sweet pops of flavor; fresh or frozen work too!
  • 1/2 cup chicken stock or water To help create the perfect consistency.

Instructions
 

Preparation

  • Gather all your ingredients.
  • Dice the onion and prepare the other veggies if using fresh.
  • Rinse the beans and measure out your spices.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onions and sauté until softened, about 3-4 minutes.
  • Add the ground turkey; cook until browned, breaking it up with a spoon (about 5-7 minutes).
  • Stir in chili powder, cumin, garlic powder, oregano, salt, and pepper, cooking for 1 minute.
  • Add the diced tomatoes, tomato sauce, and all beans. Stir until combined.
  • Pour in stock or water, and bring to a simmer. Cook for 20 minutes, stirring occasionally.

Serving

  • Check the consistency and adjust with more stock or water as needed.
  • Serve hot in bowls and let everyone customize with toppings!

Notes

This chili is naturally gluten-free; just ensure your stock is too. Top with cilantro or parsley for a fresh kick.
