  • 8 oz fettuccine You can substitute with any long pasta like spaghetti.
  • 2 tbsp olive oil Use extra virgin for a more robust taste.
  • 2 tbsp butter Can be replaced with more olive oil for a dairy-free version.

Flavorings

  • 2 cloves garlic, minced Shallots can be used as an alternative.
  • 1 cup heavy cream You can substitute with half-and-half for a lighter version.
  • 1/2 cup grated Parmesan cheese Nutritional yeast is a great substitute for vegans.
  • 1 tbsp truffle oil Adjust to taste.
  • Salt and pepper to taste Essential for seasoning.
  • Fresh parsley, chopped (for garnish) Other herbs like basil can also work.

Instructions

Cooking the Pasta

  • Boil water in a large pot and add the fettuccine. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Making the Sauce

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the Parmesan cheese until melted and smooth.

Combining

  • Add the cooked fettuccine to the skillet and toss to coat it thoroughly in the sauce.
  • Drizzle the dish with truffle oil and season with salt and pepper to taste.

Serving

  • Serve immediately, garnished with chopped parsley.

Notes

Common mistakes include overcooking the fettuccine, burning the garlic, and skipping seasoning. Taste test and adjust as necessary. For added flavor, consider adding sautéed mushrooms or spinach.
