  • 1 tsp sugar Balances acidity of the tomatoes.
  • 1/2 cup heavy cream Introduces a velvety finish.
  • 1 tsp Kosher salt Essential for flavor enhancement.
  • 1/4 tsp freshly ground black pepper Adds heat and flavor complexity.

For serving

  • 1/4 cup Shaved Parmigiano Reggiano Adds a savory, nutty finish.
  • 1 loaf Fresh bread Perfect for dipping.

Instructions
 

Preparation

  • Melt the butter in a large heavy pot over medium heat.
  • Add thyme, sliced onion, and sliced garlic to the pot; season with salt.
  • Cook until the onion is completely soft and translucent, about 10-12 minutes.
  • Raise the heat to medium-high; stir in the tomato paste and cook until caramelized in spots, about 5-6 minutes.

Cooking

  • Pour in the whole peeled tomatoes with their juices and water; increase heat to high and bring to a simmer.
  • Cut tomatoes with scissors as they rise to the surface while simmering.
  • Reduce heat to medium and simmer until flavors meld and the soup reduces to about one quart, approximately 45 minutes.
  • Remove from heat, discard thyme sprigs, and purée the soup in batches in a blender until smooth, or use an immersion blender.
  • Stir in the heavy cream, adjust seasoning with sugar and more salt if needed, and simmer for an additional 5-10 minutes.

Serving

  • Ladle soup into bowls, shave Parmigiano Reggiano over the top, serve with extra pepper on the side, and enjoy with fresh bread.

Notes

For elevated flavor, cook onions low and slow, caramelize the tomato paste, and adjust seasoning gradually. Garnish with freshly shaved cheese for a luxurious touch.
