Preparation

  • Gather all your ingredients. Ensure the chicken is fully thawed and the ingredients are at room temperature for best results.
  • In a medium bowl, combine Greek yogurt, olive oil, juice of 2 lemons, minced garlic, oregano, salt, and pepper. Stir until the mixture is creamy and well-blended.
  • Place boneless chicken breasts into a resealable plastic bag or a glass dish, then pour the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag or cover the dish with plastic wrap, then refrigerate for at least 1 hour—ideally overnight for maximum flavor.

Cooking

  • Preheat your grill or air fryer to 375°F (190°C). If using an oven, preheat to 400°F (200°C).
  • Remove the chicken from the marinade, allowing any excess to drip off. Discard the remaining marinade.
  • If grilling, place the chicken on the grill for about 6–8 minutes per side, until the internal temperature reaches 165°F (74°C) and has beautiful grill marks.
  • For air frying, place the chicken in the basket and cook for about 12-15 minutes, checking for doneness at the same temperature.
  • In the oven, lay the chicken on a baking sheet and bake for 20–25 minutes, until golden and cooked through.

Serving

  • Once cooked, remove the chicken from the heat source and let it rest for about 5 minutes to allow the juices to redistribute.
  • Slice the chicken against the grain for maximum tenderness and juiciness.
  • Serve immediately with your favorite accompaniments such as a fresh salad, grilled veggies, or whole grain wraps, garnished with lemon slices and fresh herbs.

Notes

For best results, marinate overnight. Can substitute Greek yogurt with a dairy-free alternative. Don’t skip resting time after cooking.
