Preparation

  • Rinse and drain black beans and black-eyed peas.
  • Chop red and green bell peppers into small pieces.
  • Dice onion finely for maximum flavor.
  • Cut cherry tomatoes in half.
  • Slice avocado right before serving for freshness.
  • Chop cilantro and set aside.

Mixing

  • In a large mixing bowl, combine the black beans, black-eyed peas, red bell pepper, green bell pepper, onion, corn, and cherry tomatoes.
  • Drizzle with lime juice and sprinkle with salt.
  • Mix everything thoroughly to combine the ingredients.

Serving
