Ingredients

Main Ingredients

  • 1 cup Brown rice Hearty and nutty base for the pilaf.
  • 1 cup Peas Add a pop of color and sweetness.
  • 8 oz Mushrooms Provide umami richness.
  • 1/4 cup Teriyaki sauce Brings a delicious sweet and savory glaze.
  • 2 cups Vegetable broth Enhances the overall flavor of the dish.
  • 2 cloves Garlic Adds aromatic depth.
  • 1 medium Onion Contributes sweetness and texture.
  • 2 stalks Green onions For garnish and a fresh bite.

Instructions

Preparation

  • Rinse the brown rice under cold water until the water runs clear.
  • Chop the onions and garlic finely.
  • Slice the mushrooms thinly and set aside.
  • Measure out the peas and teriyaki sauce.

Cooking

  • In a medium saucepan, bring vegetable broth to a boil.
  • Add rinsed brown rice to the boiling broth. Reduce heat to low, cover, and simmer for about 40-45 minutes, or until rice is tender and liquid is absorbed.
  • In a separate pan, heat a drizzle of oil over medium heat. Add onions and garlic, sautéing until onions are translucent.
  • Add the sliced mushrooms to the pan, cooking until they are soft and browned.
  • Stir in the peas and teriyaki sauce, cooking for an additional 2-3 minutes until the peas are heated through.
  • Combine the cooked rice with the vegetable mixture, stirring well to incorporate.

Serving

  • Remove from heat and let it sit for a few moments.
  • Fluff the pilaf with a fork to mix the ingredients.
  • Garnish with chopped green onions before serving.
  • Enjoy warm as a side dish or light main course.

Notes

Use leftover rice to save time—just heat it up before mixing with the other ingredients. Store leftover pilaf in an airtight container before cooling to maintain freshness. Garnish with sesame seeds for added crunch and visual appeal.
