Preparation

  • Chop the onion and mince the garlic. Place them aside for cooking.
  • Prepare the shredded chicken if it isn’t already cooked. You can use rotisserie chicken for convenience.
  • Open the cans of black beans and diced tomatoes, draining the beans before adding them to the pot.
  • Measure out the spices, making sure everything is ready to go.
  • Gather your ingredients, ensuring you have everything you need in one spot.

Cooking

  • In a large pot, heat one tablespoon of oil over medium heat and sauté the onions for about 3-4 minutes until they become translucent.
  • Add the minced garlic; cook for 1 more minute, until fragrant.
  • Pour in the chicken broth, followed by the diced tomatoes, black beans, and corn. Stir well to combine.
  • Season with cumin, chili powder, salt, and pepper. Bring the soup to a simmer over medium-high heat.
  • Once simmering, stir in the shredded chicken and allow it to heat through, about 5-7 minutes.
  • While the soup simmers, mix masa harina with a little water to form a smooth paste, then whisk it into the soup to thicken it.

Serving

  • Once the soup has thickened to your liking, taste and adjust seasoning if necessary.
  • Remove from heat and let it sit for a couple of minutes to allow flavors to meld.
  • Serve hot in bowls, garnishing with your choice of toppings.
  • Enjoy your Tamale Soup with a side of warm corn tortillas for a complete meal experience!

Notes

For a richer flavor, roast the tomatoes before adding them to the soup. Use leftover chicken or even turkey from holiday dinners to save on prep time. Store leftovers in airtight containers to maintain freshness for up to three days. Freezing is possible for up to 3 months.
