Instructions

Preparation

  • Step 1: Prepare the dry ingredients. Whisk together the flour, baking soda, baking powder, and salt in a bowl and set aside.
  • Step 2: Cream the wet ingredients. In a large mixing bowl, beat the softened butter, tahini, granulated sugar, and brown sugar together until light and fluffy—about 2-3 minutes.
  • Step 3: Add egg and vanilla. Incorporate the egg and vanilla extract into the mixture and mix until well combined.
  • Step 4: Combine wet and dry ingredients. Gradually add the dry ingredients to the creamy mixture, mixing until just combined.
  • Step 5: Stir in chocolate chips. Gently fold in the chocolate chips or chunks until they are evenly distributed throughout the dough.
  • Step 6: Chill the dough. Cover the dough and chill it in the refrigerator for an hour or up to overnight for best results.

Baking

  • Step 7: Preheat the oven. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone liners.
  • Step 8: Scoop the cookies. Use a cookie scoop to portion the dough into balls and place them on the prepared baking sheets, leaving space between each cookie for spreading.
  • Step 9: Bake the cookies. Bake one pan at a time for 12-14 minutes, until the edges are golden but the centers are still a bit soft.
  • Step 10: Cool the cookies. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Optionally, sprinkle with flaky sea salt.

Notes

For perfect tahini chocolate chip cookies, ensure to use room temperature ingredients. Consider using dark brown sugar for deeper flavor and don’t skip the chilling step. Bake one sheet at a time for even results.
