  • 1 cup Fresh veggies Such as lettuce and bell peppers.

Instructions
 

Preparation

  • Gather all your ingredients and cooking tools, including a large skillet and mixing bowl.
  • Rinse and drain the black beans, and chop the fresh veggies such as lettuce and bell peppers.
  • Measure out the spices and cheese to have everything at arm’s reach when cooking.
  • Cook the rice according to package instructions if you haven’t already prepared it.

Cooking/Assembly

  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, about 5–7 minutes.
  • Drain any excess fat and sprinkle in the taco seasoning, stirring to coat evenly.
  • Add in the black beans, corn, and diced tomatoes, stirring well to combine. Cook for an additional 3–5 minutes until heated through.
  • Remove from heat and mix in the cooked rice thoroughly, ensuring everything is well combined.

Serving

  • Transfer the rice mixture to serving bowls.
  • Top with crushed Doritos, shredded cheese, fresh veggies, and a dollop of guacamole.
  • Drizzle sour cream on top if desired, and serve immediately while warm.

Notes

This dish is customizable: swap ground turkey for beef, use leftover rice, and experiment with various veggies. Store leftovers for convenience, and consider freezing the main mixture for up to 2 months.
