Instructions
 

Preparation

  • Bring a large pot of salted water to boil over medium-high heat.
  • Add your pasta and cook according to package instructions (usually around 8-10 minutes) until al dente. Drain and rinse under cold water.
  • While the pasta cooks, chop bell peppers, cherry tomatoes, and red onion. Rinse black beans and set aside.
  • In a skillet over medium heat, brown the ground beef or turkey, breaking it apart until cooked through (about 5-7 minutes).

Cooking/Assembling

  • Sprinkle taco seasoning over the cooked meat and stir in 1/4 cup of water. Cook until heated through (about 3-4 minutes).
  • In a large mixing bowl, combine the cooled pasta, cooked meat, diced bell peppers, corn, black beans, cherry tomatoes, and red onion.
  • Pour in lime juice and season with salt and pepper. Toss gently until everything is well coated.
  • Stir in shredded cheese and fresh cilantro, mixing again until evenly distributed.

Serving

  • Transfer the Taco Pasta Salad to a serving bowl or dish.
  • Garnish with extra cilantro and lime wedges for a fresh touch.
  • This salad can be served immediately at room temperature or chilled for 30 minutes for enhanced flavors.

Notes
