Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine ground chicken, breadcrumbs, egg, minced garlic, and grated ginger.
  • Add soy sauce, honey, sesame oil, and sriracha. Mix until all ingredients are well incorporated.

Cooking

  • Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
  • Bake for about 20 minutes or until cooked through and golden brown.
  • While the meatballs are baking, cook your rice or quinoa according to package instructions.

Serving

  • Once the meatballs are done, assemble your bowls by placing a generous scoop of rice or quinoa as the base.
  • Top with the meatballs, and add fresh veggies like sliced cucumbers and bell peppers.

Notes

For a gluten-free option, swap regular breadcrumbs for gluten-free ones. Store leftovers in an airtight container, and enjoy within 3 days.
