Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and dice the sweet potatoes into 1-inch cubes, then rinse under cold water to remove excess starch.
  • In a large mixing bowl, combine sweet potatoes with olive oil, salt, and pepper. Toss until evenly coated.
  • Arrange the sweet potatoes on a baking sheet in a single layer for even roasting.

Cooking

  • Roast the sweet potatoes in the preheated oven for 20-25 minutes, flipping halfway through until golden brown and tender.
  • While the sweet potatoes roast, heat a skillet over medium heat. Add the ground beef, breaking it apart with a spatula.
  • As the beef begins to brown, sprinkle in taco seasoning and a dash of salt, cooking until no longer pink (about 6-8 minutes).
  • Once cooked, drain excess fat from the ground beef if necessary.

Serving

  • In bowls, layer roasted sweet potatoes first, followed by a generous scoop of the seasoned ground beef.
