  • 1 packet Taco Seasoning Provides a robust, spicy kick.
  • 1/2 cup Water Hydrates the filling.
  • 1 medium Diced Onion Enhances savory depth.

For the Toppings

  • 1 cup Cottage Cheese Creamy base packed with protein.
  • 1 piece Avocado Adds creaminess and healthy fats.
  • 2 tablespoons Hot Honey Provides sweet and spicy finish.
  • 1/4 cup Fresh Parsley For garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the sweet potatoes, then cut them into even, bite-sized cubes.
  • Dice the onions and set aside.

Cooking

  • In a large bowl, toss the sweet potato cubes with olive oil and SPG seasoning, then spread on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, flipping halfway through.
  • While the potatoes roast, heat a skillet over medium heat and add the ground beef, breaking it up as it cooks.
  • Once browned, add the diced onions and cook until translucent, around 3-5 minutes.
  • Sprinkle taco seasoning over the beef, add water, and stir well. Let simmer for 5 minutes.

Assembly and Serving

  • In serving bowls, layer the roasted sweet potatoes and the seasoned beef mixture.
  • Add a scoop of cottage cheese on top.
  • Top with sliced avocado, a drizzle of hot honey, and fresh parsley.

Notes

Great for meal prep. Store leftovers in airtight containers for up to 4 days. Reheat in the microwave or oven.
