  • 1 medium Onion Diced.
  • 1 cup Pineapple Chunks Drained, for sweetness and acidity.
  • 1 cup Broccoli Florets Fresh, cut into small pieces.
  • 1 cup Sweet and Sour Sauce Store-bought or homemade.
  • 2 cups Cooked Rice To serve as a base.
  • 2 tbsp Sesame Seeds For garnish.
  • 2 tbsp Chopped Green Onions For garnish.

Preparation

  • Gather your ingredients and lay them out for smoother cooking.
  • Cut the chicken breast into bite-sized pieces.
  • Dice the bell pepper and onion into even pieces.
  • Slice the broccoli into small florets if needed.
  • Drain and set aside the pineapple chunks.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken pieces and sauté for about 5-7 minutes until golden brown.
  • Add the diced bell pepper and onion; cook for another 3-4 minutes.
  • Incorporate the broccoli and pineapple; simmer until the broccoli turns bright green, around 3 minutes.
  • Pour in the sweet and sour sauce, stirring to coat everything for an additional 2-3 minutes.

Serving

  • Ensure your cooked rice is fluffy.
  • Spoon the chicken mixture over the rice.
  • Garnish with sesame seeds and chopped green onions.
  • Enjoy your meal with chopsticks or a fork!

Notes

For best results, use fresh veggies. You can also swap chicken for shrimp or tofu. Meal prep by chopping veggies ahead of time.
