  • 2 medium Peaches Sweet and juicy, cut into wedges
  • 4 cups Watermelon Cubed into bite-sized pieces
  • 1/4 cup Fresh Mint Finely chopped
  • 1 medium Lime Juiced
  • 1 pinch Salt To enhance flavors

Preparation

  • Wash the ripe peaches under cool water.
  • Slice each peach into wedges, discarding the pit, and place into a large mixing bowl.
  • Cube the watermelon into bite-sized pieces and add to the bowl.
  • Rinse the mint leaves and finely chop them before adding to the bowl.
  • Squeeze the juice of a lime over the fruit mixture.

Assembly

  • Gently toss the ingredients in the bowl with a large spoon.
  • Season the salad with a pinch of salt.
  • Let the salad sit for 5 minutes to allow flavors to meld.
  • Chill in the fridge before serving if desired.
  • Serve in a fancy bowl lined with mint leaves for presentation.

  • Transfer the salad to an attractive serving bowl.
  • Garnish with additional mint leaves and serve immediately.

Notes

Use ripe peaches for best flavor. Consider adding feta cheese for a creamy contrast or a pinch of chili powder for a spicy variant. Store leftovers in an airtight container for up to two days.
