For the meatloaf

For the glaze

  • 1/2 cup ketchup Forms the base of the glaze, providing sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan over medium heat, melt half of the butter.
  • Stir in the minced onions and finely diced celery; cook for 5-6 minutes until softened.
  • Add the minced garlic and sauté for an additional minute.
  • Add the remaining butter, chicken broth, and water, then bring to a boil.
  • Stir in the stuffing mix, reduce heat to low, and combine until thoroughly mixed.
  • Remove from heat, let cool for 5 minutes, then stir in the whisked eggs.
  • Transfer the mixture to a large bowl, season the ground beef with salt and pepper, then add to the bowl.
  • Incorporate ground pork and mustard, mixing until just combined.
  • Shape the mixture into a loaf and place in a lightly greased loaf pan.

Cooking

  • Bake uncovered in the preheated oven for 40 minutes.
  • While the meatloaf is baking, combine glaze ingredients in a small bowl.
  • Brush half of the glaze mixture over the top of the meatloaf.
  • Continue baking for an additional 20 minutes.
  • Remove from oven, brush with the remaining glaze, and return to the oven.
  • Bake for a final 10-15 minutes until the internal temperature reaches 155°F (68°C).
  • Let the meatloaf rest for 15 minutes in the pan before slicing.
  • Slice and serve alongside mashed potatoes or your favorite sides.

Notes

Finely diced vegetables enhance flavor blending. Avoid overmixing the meat mixture for optimal texture. Let the meatloaf sit overnight for an intense flavor. Use a meat thermometer to ensure it reaches the perfect internal temperature.
