Ingredients

For the Chicken

  • 1 cup Marsala wine Enhances the sauce with a sweet, rich flavor.
  • 1 cup Chicken broth Forms the base of the sauce for a savory touch.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil.
  • In a skillet, heat a tablespoon of olive oil over medium heat.
  • Sauté sliced mushrooms for about 5-7 minutes or until they begin to shrink and turn golden brown. Set aside.
  • In a mixing bowl, combine ricotta cheese, mozzarella cheese, sautéed mushrooms, and freshly chopped parsley. Season with salt and pepper, and mix well.

Cooking

  • Create a pocket in each chicken breast by slicing into the thickest side without cutting through.
  • Stuff each pocket generously with the cheese and mushroom mixture.
  • Heat the remaining tablespoon of oil in the skillet over medium heat.
  • Carefully sear both sides of the stuffed chicken breasts for about 4-5 minutes until golden brown.
  • Transfer the chicken to the greased baking dish, and pour Marsala wine and chicken broth over the top.
  • Bake in the preheated oven for 25-30 minutes until the chicken is cooked through (internal temperature of 165°F / 74°C).

Serving

  • Let the chicken rest for 5 minutes before slicing.
  • Drizzle the delicious sauce from the baking dish over the chicken pieces.
  • Garnish with additional fresh parsley and serve hot.

Notes
