Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a baking dish lightly with olive oil.
  • In a bowl, combine cream cheese, mozzarella cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper; mix until well combined.
  • Carefully slice each chicken breast horizontally to create a pocket.

Cook/Assemble

  • Stuff each chicken breast with the cheese and spinach mixture.
  • Secure the opening with toothpicks.
  • Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  • Transfer to the prepared baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

Serve

  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Slice the chicken to reveal the creamy filling and serve warm.

Notes

Make ahead and store in the fridge for meal prep. Can freeze leftovers for up to 2 months.
