Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the bell peppers in half lengthwise and remove the seeds.
  • Strategically place the halves in a baking dish, cut side up.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add onions and garlic, sauté until translucent (about 3-4 minutes).
  • Stir in mushrooms and cauliflower, cooking until softened.
  • Mix in the cooked turkey, tomato sauce, soy sauce, Italian seasoning, salt, and half the cheese.
  • Spoon the mixture into the bell pepper halves and sprinkle the remaining cheese on top.

Baking

  • Cover the baking dish with foil.
  • Bake for 25-30 minutes until the peppers are tender.
  • Remove foil, and bake for an additional 5-10 minutes for a bubbly cheese topping.
  • Sprinkle with parsley before serving!

Notes

For the best results, try ground beef or chicken instead of turkey, or add red pepper flakes for some heat. You can also assemble the peppers ahead of time and store them in the fridge until you're ready to bake them.
