Preparation

  • Preheat your grill to medium-high heat (about 400°F / 200°C).
  • Season your chicken breasts with salt and pepper, ensuring every side is well-coated.
  • Prepare your corn by either grilling it directly or using pre-grilled corn; set it aside for assembly later.
  • Chop the cilantro finely, setting it aside for garnishing at the end.

Cooking

  • Once the grill is hot, place the seasoned chicken breasts on it and cook for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F / 74°C).
  • While the chicken cooks, warm your cooked rice in a microwave or over low heat in a pan until heated through.
  • When the chicken is cooked, remove it from the grill and let it rest for 5 minutes, then slice into bite-sized pieces.
  • Combine the warm rice, grilled corn, and sliced chicken in a large bowl, adding lime juice for a zesty flavor boost.

Serving

  • Portion the mixture into bowls, making sure to distribute the chicken and corn evenly over the rice.
  • Top each bowl with a generous dollop of crema or sour cream and a sprinkle of chopped cilantro for a fresh touch.
  • Season with additional salt and pepper as desired, and serve immediately for the best taste and texture.

Notes

For juicier chicken, marinate in lime juice for 30 minutes before grilling. This dish is best served fresh but can be stored in airtight containers for meal prep. Can be frozen for up to 3 months.
