  • 1 tablespoon Mint leaves For freshness, optional layering.

Instructions
 

Preparation

  • Wash the strawberries and mint leaves thoroughly under cold water.
  • Hull the strawberries, removing the green tops.
  • Cut the watermelon into chunks, discarding the rind and seeds.

Blending

  • In a blender, combine the strawberries, watermelon chunks, honey, and lemon juice.
  • Blend until the mixture is smooth and no chunks remain.
  • Taste and adjust sweetness if necessary; blend again if more honey is added.

Freezing

  • Pour the blended mixture into popsicle molds, adding mint leaves between layers if desired.
  • If using, insert sticks into the molds.
  • Freeze for at least 4-6 hours, or until solid.
  • To serve, run the molds under warm water for a few seconds to help release the popsicles.

Notes

Use ripe fruits for the best flavor. Store leftovers in an airtight container to prevent freezer burn. These popsicles can be made ahead and stored for up to 2 months.
