Instructions
 

Preparation

  • Hull and wash the strawberries thoroughly.
  • Place the strawberries in a blender or food processor.
  • Add in the sugar and lemon juice.
  • Blend until smooth and set aside.

Cooking and Assembly

  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Gently fold in the strawberry mixture into the whipped cream.
  • If using, sprinkle gelatin over a little cold water to dissolve, then fold it into the mousse.

Serving

  • Spoon the mousse into serving glasses.
  • Chill in the refrigerator for at least one hour.
  • Serve chilled, garnished with strawberry slices or mint leaves.

Notes

Use ripe strawberries for the best flavor. Chill the mixing bowl before whipping cream for quicker results. Adjust sugar based on the sweetness of strawberries. Leftovers can be stored in the fridge for up to three days.
