Filling Ingredients

  • optional Powdered Sugar For dusting the finished mochi.
  • 1/2 cup Whipped Cream or Cream Cheese Adds a creamy filling.

Instructions
 

Preparation

  • Wash 1 cup of fresh strawberries, remove the stems, and slice them.
  • Puree the strawberries in a blender until smooth.
  • Dust a clean workspace with cornstarch to keep the mochi from sticking.

Cooking

  • In a microwave-safe bowl, mix sweet rice flour, sugar, and water until combined.
  • Cover loosely with a lid and microwave on high for 1 minute.
  • Stir, cover again, and microwave for another minute; repeat until the mixture is translucent and sticky (about 3 times).
  • Transfer the mochi to the cornstarch-dusted surface and let it cool.

Assembly

  • Once cool enough to handle, dust hands with cornstarch and portion mochi into small pieces.
  • Flatten each piece and place a spoonful of strawberry puree and whipped cream or cream cheese in the center.
  • Fold the edges over to seal the filling and roll gently into a ball.
  • Dust with powdered sugar if desired and serve immediately.

Notes

Store unused mochi in an airtight container for up to 3 days. Can freeze for up to a month. Use chilled whipped cream for better filling consistency.
