Preparation

  • Preheat the oven to 350°F and prepare a 9 x 13 inch baking pan by greasing and flouring it.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, combine the white sugar, brown sugar, and the zest of one lime. Rub the zest into the sugar until fragrant.

Cooking

  • Add the softened butter to the sugar mix and beat until light and fluffy, about 2 minutes.
  • Beat in eggs one at a time, followed by vanilla extract and lime juice. Mix until well combined.
  • Gradually add half of the flour mixture to the wet mixture, beating until just combined. Add remaining flour and beat until incorporated.
  • Stir in the white chocolate chips and freeze-dried strawberries gently.
  • Pour the batter into the prepared pan, spreading evenly.
  • Bake for 21-24 minutes or until a toothpick inserted comes out clean.
  • Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Serving

  • Mix lime zest and juice with powdered sugar until smooth for glazing.
  • Drizzle glaze over cooled blondies and sprinkle with freeze-dried strawberries.
  • Slice into 15 pieces and serve.

Notes

These blondies can be made ahead of time and stored at room temperature. They freeze well too!
