Instructions
 

Preparation

  • Preheat the oven to 350 degrees F.
  • Grease and flour a 9 x 13 inch baking pan, optionally lining the bottom with parchment paper.
  • In a medium mixing bowl, combine flour, baking powder, and a pinch of salt. Set aside.
  • In a large mixing bowl or stand mixer, mix white sugar, brown sugar, and the zest of one lime until fragrant.
  • Incorporate softened butter and beat with a mixer until light and fluffy, approximately 2 minutes.
  • Add eggs one at a time while mixing on medium, then add the vanilla extract and lime juice. Mix for about a minute, scraping down the sides as needed.
  • Gradually add half the flour mixture and beat until just combined, then add the remaining flour mixture and mix until just combined, scraping down sides as necessary.
  • Stir in white chocolate chips and freeze dried strawberries gently.
  • Pour the mixture into the prepared baking pan and spread it evenly.

Baking

  • Place the pan in the oven and bake for 21-24 minutes, or until a toothpick comes out clean.
  • Remove from the oven and cool in the pan for about 5 minutes before transferring to a wire rack to cool fully.
  • Once cooled, mix the zest and juice of one lime with powdered sugar until smooth.
  • Drizzle the glaze over cooled blondies and sprinkle with additional crushed freeze dried strawberries.
  • Cut into 15 pieces and serve.

Notes

For best results, ensure butter is softened but not melted, and let eggs reach room temperature before baking. Avoid overmixing to maintain tenderness.
