Preparation

  • Rinse 2 cups of fresh strawberries under cold water, remove the green tops, and slice them into halves or quarters, depending on preference.
  • Juice and zest 2 fresh lemons, making sure to catch the juice in a bowl while avoiding any seeds.
  • If desired, measure out about 1/4 cup of sugar or your chosen sweetener for added sweetness.

Assembly

  • In a large mixing bowl, combine the sliced strawberries with the lemon juice and lemon zest.
  • Add the granulated sugar (or honey/agave syrup if using) and gently toss until strawberries are well coated. Allow to sit for a few minutes to let the flavors meld.
  • Garnish with fresh mint leaves, fluffing the salad gently for an appealing presentation.

Serving
