Ingredients
  

For the cobbler

  • 1 stick 1 stick salted butter Adds richness and helps create that amazing crust.
  • 1 1/4 cups granulated sugar, divided Sweetens the strawberries and balances flavors.
  • 1 cup self-rising flour Forms the base of the cobbler, making it fluffy.
  • 1 cup whole milk Adds creaminess and moisture to the batter.
  • 2 Tbsp. cornstarch Thickens the fruit mixture for the right consistency.

For the filling

  • 2 lb. strawberries, halved Fresh and flavorful, about 6 1/2 cups.
  • 1 Tbsp. fresh lemon juice Brightens and enhances the taste of the strawberries.

For serving

  • 1 scoop vanilla ice cream Perfect creamy companion to the warm dessert.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare a baking dish by greasing it lightly with butter.
  • In a bowl, toss the halved strawberries with lemon juice and half a cup of sugar. Set aside to let them marinate.
  • In another bowl, combine the flour, remaining sugar, and cornstarch.

Cook/Assemble

  • Melt the butter in the baking dish in the oven as it preheats.
  • Once melted, take the dish out and pour in the flour mixture.
  • Slowly add the milk, gently stirring until just combined—do not overmix!
  • Spread the marinated strawberries evenly over the mixture, ensuring some are on top for gooey goodness.

Baking

  • Bake in the preheated oven for about 40-45 minutes until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.
  • Scoop into bowls and top with a generous scoop of vanilla ice cream. Enjoy!

Notes

Use ripe, fresh strawberries for the best flavor. You can mix in other berries or spices to create variations. Store leftovers in an airtight container in the fridge for up to 3 days.
