Ingredients
  

For the Filling

  • 2 lbs strawberries Fresh and ripe, the star ingredient.
  • 1 cup granulated sugar For macerating strawberries.

For the Cobbler

  • 1.5 cups granulated sugar Divided; used in filling and batter.
  • 8 tablespoons unsalted butter Melted for the batter.
  • 1.5 cups all-purpose flour Provides structure and texture.
  • 1.5 teaspoons baking powder Helps to create a fluffy topping.
  • 0.25 teaspoons salt Enhances flavors.
  • 1 cup milk Brings together the batter.
  • 1 teaspoon vanilla extract For added flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, wash and slice strawberries, then sprinkle with 1 cup of sugar to coat. Set aside to macerate for about 10 minutes.
  • In another bowl, mix together the flour, remaining sugar, baking powder, and salt.

Cooking/Assembly

  • Melt the butter in a baking dish or pan in the oven as it preheats.
  • Once the butter is melted, gently mix in the milk and vanilla into the flour mixture until combined.
  • Pour the batter over the melted butter without stirring.
  • Spoon the macerated strawberries over the batter, letting some of the juice spread out.

Serving

  • Bake for about 45-50 minutes or until the top is golden and bubbly.
  • Allow to cool slightly before serving. Enjoy warm, possibly with a scoop of vanilla ice cream on top!

Notes

Use fresh strawberries for the best flavor and texture. Don’t skip macerating as it enhances the strawberry juices. Can be adapted for gluten-free and dairy-free diets.
