Preparation

  • Preheat your oven to 350°F (175°C).
  • Gather all your ingredients and a mixing bowl.
  • Thaw the frozen strawberries and dice them without draining.
  • Grease a loaf pan with a bit of oil or line it with parchment paper.

Mixing and Baking

  • In a large bowl, whisk together the eggs and sugar until well combined.
  • Add the oil and vanilla extract, mixing until smooth.
  • In a separate bowl, stir together the flour, baking powder, baking soda, ground cinnamon, and salt.
  • Gradually combine the dry ingredients into the wet mixture until just blended.
  • Gently fold in the thawed strawberries along with their juices.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake in the preheated oven for 55-65 minutes, or until the top is golden and a toothpick comes out clean.

Serving

  • Remove the bread from the oven, letting it cool in the pan for 10 minutes.
  • Carefully transfer the bread to a wire rack to cool completely.

Notes

Use room temperature eggs for better mixing and fluffier texture. Roll the strawberries in a bit of flour before folding to prevent sinking. Store leftovers in an airtight container to keep them fresh.
