Marinade Ingredients

Instructions
 

Preparation

  • Preheat your grill to medium-high heat (about 375–450°F or 190–232°C).
  • Rinse and slice the fresh strawberries and chop the basil.
  • In a small bowl, mix together olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper to create the marinade.
  • Place the boneless chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is well coated.
  • Let the chicken marinate for at least 15 minutes.

Cooking

  • Once the grill is ready, lightly oil the grates to prevent sticking.
  • Remove the chicken from the marinade (reserve the marinade) and place it on the grill.
  • Cook the chicken for about 6-7 minutes per side or until it reaches an internal temperature of 165°F (75°C).
  • While the chicken is cooking, pour the reserved marinade into a small saucepan and bring it to a boil.
  • Reduce the heat and let it simmer for about 5 minutes until slightly thickened.

Serving

  • Once cooked, transfer the chicken to a plate and drizzle the thickened marinade over the top.
  • Garnish with fresh strawberries and chopped basil.
  • Let the chicken rest for 5 minutes before slicing.
  • Serve warm and enjoy!

Notes

Great for meal prep and can be paired with greens or whole grains for a complete meal. For extra flavor, marinate for up to 2 hours. Can substitute agave nectar for honey. Consider cooking in an air fryer if short on time.
