Cheese

  • 4 ounces American cheese Provides that quintessential creaminess and nostalgia factor.
  • 4 ounces grated mild cheddar cheese Introduces a sharpness and richness that balances the American cheese.

Instructions
 

Preparation

  • In a medium saucepan, add the noodles, butter, water, evaporated milk, and salt. The butter will melt and coat the pasta as it cooks.
  • In a small bowl, dissolve the dry mustard in water.

Cooking

  • Bring the mixture to a boil over medium heat. Then, reduce to a simmer and cook the noodles according to package directions for about 5–8 minutes.
  • Stir occasionally, ensuring there’s ¼ to ⅓ cup liquid left in the pan; add more evaporated milk if needed.
  • Once the noodles are tender, remove the pan from heat. Gradually stir in the cheeses until they melt and the mixture becomes creamy.

Serving

  • Adjust the seasoning to taste, and serve hot.

Notes

For added nutrition, incorporate some cooked veggies like peas or spinach. To make it even more filling, consider adding shredded chicken or cooked bacon. For a flavor twist, experiment with different cheese blends or spices, such as smoked paprika. Store leftovers in an airtight container in the refrigerator for up to three days.
